Happy New Year!
I hope everyone had a great holiday season. We decided to stay in Seattle this year instead of traveling to see family and ended up having a great time creating some new traditions! I took advantage of the time off to try some new and more complicated recipes for our holiday dinners. We also had one of the best plant-based meals I’ve ever eaten at a local (non-vegan but willing to accommodate) restaurant!
As we begin January, most of us start thinking about resolutions - especially eating healthier, so I thought that lemon would be the perfect Plant of the Month this month. When I think of lemons, I think of purification, brightness, and a fruit that really wakes up your senses (which can help you rely less on some of the less healthy seasoning ingredients in your cooking).
I use lemon juice and zest in my cooking all the time (probably more than Patrick would prefer). I also like to squeeze half a small lemon in to a mug of warm water as a detoxifying and warming start to the day. And instead of composting the juiced scraps, we throw them in the garbage disposal to keep it smelling clean and fresh. Lemons are so versatile!
As we start the new year, I am recommitting to writing posts on a more regular basis. I plan to highlight some of the recipes I’ve developed over the past few months that have become part of our regular repertoire.
